1 large potato
1/2 red onion
3 tablespoons olive oil
1/2 teaspoon red chili pepper flakes
1/4 cup diced parsley
2 cloves garlic
5 large brown eggs
1/2 cup cream
I love the way red onions and potatoes cook especially when they've been sautéed with olive oil.
I add garlic, parsley, red chili flakes, garlic, salt and pepper. I sauté until the onions are soft and the potatoes are light golden brown.
I use a mason jar and crack five brown eggs then add 1/2 cup cream and season with salt and pepper.
Put your lid on your mason jar and vigorously shake until well blended.
I put the potatoes and onion mixture into a round 9"pie plate that is at least 2"deep that I lightly coated with coconut oil.
Preheat your oven to 350°.
Place the mixture of potatoes and onions inside the pie plate, pour the eggs on top until potatoes are covered. Bake 20 to 30 minutes
depending on your oven until the top is bubbly and light golden brown.
Rest for up to five minutes after it makes it easier to cut and serve.
Serve with salsa and some greens on the side. Cheers!
